A very simple recipe for a humus like bean paste.

Hi Carol your recent humus recipe' reminded me of this pretty fair game day snack or meal.

Step 1. Refry  1 to 2 cups pinto beans.  That is mash some whole cooked Pinto Beans in a medium size frying pan or use 1 can refried beans.  Something you would make a nice 4 egg omelet in. 

Step 2.  Heat the beans and add a tablespoon of bacon grease or your favorite oil or margarine. 

Step 3. Add any of:  diced onions, jalapenos, diced bell pepper, ham or bacon bits, diced ham or chicharone's, cheddar cheese,  your favorite add in: pepper, Garlic and salt and pepper.

Step 4. Scramble an egg (or 2 ) into the very hot beans.  This will give the mixture some substantial body.  Try not to over cook.  2 minutes should be enough to, but just, thoroughly cook the egg(s).

 
Makes 2-6 servings.  Eat it alone or with corn or flour tortillas, biscuits,  tortilla chips or corn chips.  It's even good on saltines.  Add a chopped olive to make a pretty fair looking hors d'ouerve.  It makes a really hearty sandwich spread.  Just put it on some toast that has been nicely buttered.  ... and Katy, Bar the door !! 

Eat one of these sandwiches and your loaded for bear.  It's a great hunter's or hiker's or weekend rancher's lunch. 

My favorite condiment for this is Louisiana Hot Sauce or sliced pickled jalapeno's.
