Hi Gary,

Is it the sort where you can make it ahead and just warm it up?

Are the folks expecting traditional chili and if so, are they rabid on the beans or no beans bit?

What you will find is many will think if it's so hot it blows your socks off, it must be a good recipe.

Reality is a true GOOD chili should have great flavor but need not be very hot at all.  Better done with depths of flavorssuch as comino (whole cumin seed), hot sweet Hungarian red pepper, Mexine chili pepper blend (not super hot, smokey with a poblano feel to it), black fresh ground pepper, fresh garlic. Take any standard recipe and use 1/3 of the meat as ground pork and the rest beef.

Go distinctive which has won me several awards in San Antonio Texas in the alternative chili set.

White bean chili.  It's all white beans, chicken broth to cook them in, comino, white pepper (to maintain color), minced garlic,  suriname (fake lobster), green or yellow peppers (some hot, some not) and my pizazz was to have 1/2 lb crawdads tails and then perch another 15 or so whole ones looking like they were having a party sitting on the rim of the crockpot with  few swimming along on the top.

Fairly close there.  I even got some of those frilly bar drink umbrellas and used them as props.

Then there is the infamous southern chili.  It starts like a medium level Texas one but for every 4 cups of other total volume, you add 1/2 cup veggies such as squash, cauliflower, green beans and so on.  Olives (ripe and green) work well.  If interested, I can type that one up for you.
